Remove from heat and set aside.&lt;br /&gt;In the bowl of an electric mixer on low speed, beat Ricotta cheese, cream cheese with the egg and 1/4 cup sugar until mixture is smooth.&lt;br /&gt;Pour into pie shell.&lt;br /&gt;Spread pineapple mixture over top of Ricotta in pie.&lt;br /&gt;Cut the second pie crust into strips 1 1/2 inches wide and arrange strips over the top of pie in a lattice fashion.&lt;br /&gt;Brush the top of the crust with a tablespoon of milk which has been beaten with the yolk of 1 egg to make a golden and shiny crust.&lt;br /&gt;Bake pie at 425°F for 15 minutes. Roll out dough; fit into 9-inch pie plate, fluting edge of crust or decorating as desired. Place in freezer 10 minutes.&lt;br /&gt;Preheat oven to 400°F.&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;Filling:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;2 (3 oz.) pkg. cream cheese, softened&lt;/li&gt;&lt;li&gt;18 oz. container fresh ricotta cheese&lt;/li&gt;&lt;li&gt;1 (16 oz.) can solid pack plain pumpkin&lt;/li&gt;&lt;li&gt;2 large eggs&lt;/li&gt;&lt;li&gt;1/2 cup light brown sugar, firmly packed&lt;/li&gt;&lt;li&gt;2 tablespoons grated orange peel&lt;/li&gt;&lt;li&gt;1/2 teaspoon salt&lt;/li&gt;&lt;li&gt;1/2 teaspoon ground cinnamon&lt;/li&gt;&lt;li&gt;1/2 teaspoon freshly grated nutmeg&lt;/li&gt;&lt;/ul&gt;INSTRUCTIONS&lt;br /&gt;In food processor or blender, process cream cheese and ricotta until well blended and smooth.&lt;br /&gt;Add pumpkin, eggs, brown sugar, 2 tablespoons grated orange peel, salt, cinnamon and nutmeg; process until thoroughly blended.&lt;br /&gt;Pour mixture into prepared crust. In small bowl of electric mixer at high speed, beat cream and confectioners sugar until stiff peaks form. Stir in 1 tablespoon grated orange peel and&lt;br /&gt;orange-flavored liqueur (if desired). Brush with half and half (half milk, half cream). Reduce heat to 325 and continue cooking for another 30 minutes or until is golden brown and filling is bubbly. In a clean bowl beat egg whites only until slightly foamy.In a measuring cup, add 1 can of evaporated milk. Add ground beef, minced garlic and basil; sprinkle with salt and pepper. Set aside.&lt;br /&gt;Soften the gelatin and 1/4 cup of cold water. In a small saucepan, combine 3/4 cup of sugar, corn starch, milk and salt. Bring to a boil over medium heat stirring constantly about five minutes.&lt;br /&gt;To temper the eggs, stir a small amount of the hot mixture into egg yolks, and add egg yolk mixture to saucepan. Continue to cook one minute.&lt;br /&gt;&lt;br /&gt;Add 1-1/2 c. of the hot mixture into the softened gelatin and stir well until dissolved. Stir in 1/2 teaspoon vanilla extract and 1 cup coconut. Place in refrigerate and chill until mixture has thickened but not fully set.&lt;br /&gt;In a small saucepan add chocolate and 2 tablespoons of sugar to the remaining egg yolk mixture, stirring over low heat until chocolate melts. Stir in the remaining vanilla extract and cool. Pour into the pie shell and chill.&lt;br /&gt;Beat egg whites until soft peaks form and eggs are foamy but not dry, gradually adding in the remaining sugar. Fold gently into the chilled gelatin mixture. Spread over the chocolate in the pie shell.&lt;br /&gt;Sprinkle with the buttered, toasted coconut.&lt;br /&gt;Serve the pie cold with whipped cream and garnish with chocolate curls, if desired. Hershey's Almond Chocolate Bar&lt;/li&gt;&lt;li&gt;6 T. water&lt;/li&gt;&lt;li&gt;8 inch graham cracker crust pie shell&lt;/li&gt;&lt;/ul&gt;INSTRUCTIONS&lt;br /&gt;Melt chocolate bar in water over low heat stirring frequently.&lt;br /&gt;Remove from heat and allow to cool.&lt;br /&gt;Meanwhile, whip cream until it forms peaks. Allow to come to room temperature for 20 minutes before attempting to roll out. Or use prepared pie dough.&lt;br /&gt;Saute the onion in bacon drippings (you can substitute olive oil if you're watching your cholesterol).&lt;br /&gt;Add ground beef and cook until lightly browned. Add thinly sliced (or chopped) garlic and other herbs and wine. Sprinkle with flour (Wondra flour works well here). Add broth and simmer 10 minutes. Add the chopped egg and allow mixture to cool.&lt;br /&gt;Roll pie dough out into 6 inch circles. Put 3 Tablespoons of the meat mixture onto one side of the circle, fold pastry over the meat and pinch sides together forming a half circle. Moisten the edges of the dough before sealing with a little water. Fry the turnovers in deep shortening or salad oil heated to 360 degrees a few at a time for about 3 minutes until golden. Add a little water to the&lt;br /&gt;remaining meat mixture. Heat and stir until a sauce-like consistency and serve over the pies.  This nice pie is ready for feast. This &lt;span style="font-weight: bold;"&gt;pie recipe&lt;/span&gt; makes six servings. Great taste ! Combine crumbs, sugar, and butter. Blend well with fork or pastry blender. Using back of large spoon, press crumb mixture inside 9-inch pie plate to coat bottom and sides evenly.&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Filling directions:&lt;/span&gt;&lt;br /&gt;In a large bowl, cream the cream cheese and butter. Add sugar and egg yolk. Mix well. Add flour, milk, lemon juice and peel. Pour into graham cracker crust; bake 35 minutes in a 350 degree oven. Chill.Lemon&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Topping Directions:&lt;/span&gt;&lt;br /&gt;Mix the corn starch in a 1/3 cup of the cold water and bring the rest of the water to the boiling point. Add the moistened corn starch and cook until transparent. Add the butter, sugar, lemon juice and grated rind and set aside to cool. Beat the lemon mixture well until smooth and place on top of the baked pie. Mix flour and salt in medium bowl. Cut in margarine, using pastry blender or crisscrossing 2 knives, until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).Gather pastry into a ball. Combine sweetened condensed milk, lime zest,lime juice, lightly beaten egg yolks, and salt; blend until mixture thickens. Stir in avocado pulp. Pour filling into pie shell.&lt;br /&gt;2. Stir to combine.Add the chilled butter pieces and shortening to the bowl. Cut them in with a pastry cutter or knife.&lt;br /&gt;Add the ice water. Mix until the dough holds together (add a bit more water, if necessary).&lt;br /&gt;Turn the dough onto a lightly floured surface, knead it together, then divide in half.&lt;br /&gt;Flatten each half into a disk, wrap in saran wrap and chill for at least half an hour.&lt;br /&gt;Roll out one of the disks on a lightly floured surface until you have a circle that's about 12 inches in diameter.&lt;br /&gt;Put the circle in a 9" pie plate, trimming any extra dough from the edges with a sharp knife (parents only).&lt;br /&gt;Return it to the refrigerator until you are ready to make the pie.&lt;br /&gt;Add filling (see below).&lt;br /&gt;&lt;br /&gt;Roll out the second ball of dough and cover top.Use a fork or your fingers to pinch the edges together.Cut two small slits in the top.&lt;br /&gt;&lt;br /&gt;FILLING:&lt;br /&gt;&lt;br /&gt;Heat oven to 425 degrees.Peel, core and slice the apples.Mix sugar, flour, nutmeg, cinnamon, and salt in large bowl.Stir in apples.&lt;br /&gt;Pour into pastry-lined pie dish.Dot with margarine.Cover with top crust and seal the edges.&lt;br /&gt;Cut two small slits in the top.&lt;br /&gt;Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust.
