Lemon Cream Cheese Pie

Lemon Cream Cheese Pie...a great pie recipe to try...nice one !

  • 1 2/3 Cup graham cracker crumbs, finely crushed
  • 1/4 Cup sugar
  • 1/3 Cup butter or margarine, softened
  • 8 oz cream cheese
  • 2 tbsp butter
  • 1/2 c sugar
  • 1 egg
  • 2 tbsp flour
  • 2/3 c milk
  • 1/4 c lemon juice
  • 2 tbsp grated lemon peel (optional)
Lemon Topping:
  • 1-1/2 tablespoons corn starch
  • 1 cup water
  • 1 tablespoon butter
  • 1 cup sugar
  • 1 lemon (juice & peel)
In plastic bag, finely roll 10-12 graham crackers, or use food processor. Combine crumbs, sugar, and butter. Blend well with fork or pastry blender. Using back of large spoon, press crumb mixture inside 9-inch pie plate to coat bottom and sides evenly.
Filling directions:
In a large bowl, cream the cream cheese and butter. Add sugar and egg yolk. Mix well. Add flour, milk, lemon juice and peel. Pour into graham cracker crust; bake 35 minutes in a 350 degree oven. Chill.Lemon

Topping Directions:
Mix the corn starch in a 1/3 cup of the cold water and bring the rest of the water to the boiling point. Add the moistened corn starch and cook until transparent. Add the butter, sugar, lemon juice and grated rind and set aside to cool. Beat the lemon mixture well until smooth and place on top of the baked pie. Refrigerate and serve when cold....and this nice lemon cream cheese pie is ready to serve...nice taste of pie..enjoy it !

Rhubarb Meringue Pie

Another great pie recipe to try ...Rhubarb Meringue Pie...its recommended !

Pie Crust:
  • 1 cup Gold Medal all-purpose flour
  • 1/2 teaspoon salt
  • 1/3 cup plus 1 tablespoon margarine or 1/3 cup lard
  • 2 to 3 tablespoons cold water
  • 2 eggs
  • 1 cup sugar
  • 1/3 cup Gold Medal all-purpose flour
  • 4 cups cut-up rhubarb
  • 2 tablespoons butter or margarine
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup sugar
Baked Pie Crust:
Heat oven to 475 F. Mix flour and salt in medium bowl. Cut in margarine, using pastry blender or crisscrossing 2 knives, until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).Gather pastry into a ball. Shape into flattened round on lightly floured surface. Roll pastry, using floured rolling pin, into circle 2 inches larger than upside-down pie plate, 9x1 1/4 inches. Fold pastry into fourths; place in pie plate.
Unfold and ease into plate, pressing firmly against bottom and side.Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired.
Prick bottom and side of pastry thoroughly with fork. Bake 8 to 10 minutes or until light brown; cool on wire rack.

Heat oven to 375 F. Beat eggs and 1 cup sugar in large bowl with electric mixer on medium speed until thickened. Stir in flour and rhubarb; pour into pie crust. Dot with butter. Cover edge of crust with 2- to 3-inch strip of aluminum foil to prevent excessive browning.
Bake 35 to 45 minutes or until filling is bubbly and rhubarb is tender. Cool pie on wire rack while preparing meringue.Heat oven to 400 F. Beat egg whites and cream of tartar in large bowl on high speed until foamy. Beat in 1/4 cup sugar, 1 tablespoon at a time; continue beating until stiff and glossy (do not underbeat). Spread meringue over rhubarb mixture to edge of crust. Bake 6 to 8 minutes or until light brown. Cool pie away from draft, about 30 minutes...and this amazing pie recipe is ready for feasts !...great ot enjoy with relatives !


Garlic Potato Pie recipe

Another great pie recipe to try..the Garlic Potato Pie ....nice one !

  • 1 lb of scrubbed boiling potatoes.
  • 6 cloves fresh garlic, sliced finely.
  • 1 cup of milk.
  • ¼ cup of breadcrumbs.
  • 3 tablespoons of grated parmesan cheese.
  • 3 tablespoons of butter.

Preheat your oven to 380°F (180°C).Slice potatoes thinly.Butter a 9-inch pie plate.Arrange a layer of potatoes, garlic slices, parmesan and slices of butter.Repeat using the rest of the ingredients (other than the milk), saving some of the cheese and the butter.Heat the milk and pour over top of the potatoes.Top with bread crumbs and remaining cheese and butter.Bake for 1 hour, until the potatoes are tender and top has turned golden brown...and the Garlic potato pie recipe is ready to serve....nice and tasty !

  • 4 cups of fresh peach slices, peeled, pitted.
  • 1 cup of crushed peaches.
  • 1 cup of sugar.
  • ½ cup of water.
  • 3 tablespoons of cornstarch.
  • 1 tablespoon of butter.
  • Ice cream, to serve with.
Preparation Instructions:

In a suitably sized pan, combine the crushed peaches, sugar, water, cornstarch, and butter.
Cook over low heat until the mixture is clear and thick.Set aside and allow to cool.Fill the baked pie crust with the sliced peaches.Pour the cooled, cooked mixture over the peach slices.Chill thorougly.Serve with ice cream....hmmm...amazing ! Great taste of peach pie. ! Enjoy it with friends !

  • Nine-inch pie shell, baked.
  • 4 cups of strawberries.
  • 1 cup of water.
  • 1 cup of sugar.
  • 3 tablespoons of cornstarch.
  • 2 tablespoons of white corn syrup.
Preparation Instructions:

Boil together the water, sugar, cornstarch and white corn syrup.Cook until the mixture begins to thicken.Allow to cool.Once cooled, add strawberries and pour into the baked pie shell.Chill, then the strawberry pie is ready to serve...enjoy !

  • 1 nine-inch vanilla wafer pie crust.
  • 4 cups of pitted cherries.
  • 2 cups of whipped cream.
  • 1 cup of white sugar.
  • 2 tablespoons of cold water.
  • 2 tablespoons of corn starch.
  • 4 teaspoons of lemon juice.
  • ¼ envelope of unflavored gelatin.
  • Whipped cream, to serve with.
Preparation Instructions:

In a small bowl, soften the gelatin in the cold water. Set aside.In a suitably sized saucepan, mash 2 cups (half) of the cherries with the white sugar. Next, add in cornstarch and lemon juice; stirring gently.
Cook over a medium heat, stirring until the mixture turns thick and transparent.Remove from the heat and add the gelatin and stir.Slice the other 2 cups of cherries into the crust, then pour
the mixture over top.Chill for 5-6 hours. Serve with whipped cream...hmmm..great taste of cherry pie...! Delicious !

  • 1 pound lean ground beef.
  • 2 cups of sweet red peppers (including sauce).
  • 1 chopped onion.
  • 1 can sliced mushrooms (drained).
  • 1 cup of grated mature Cheddar cheese.

Place peppers, including liquid, into food processor; process until peppers are cut into very small pieces.Brown meat and onions in a pan.Add peppers, mushrooms, and cheese to pan.Spoon into bottom crust.Cover with top crust, and seal the edges.Bake at 350°F until crust is golden-brown, and pie is heated through...the beef & pepper pie is ready...great taste ...! Enjoy it with friends !

Baked Tuna Pie recipe

Try this Baked Tuna Pie recipe...nice !
  • 13 oz of evaporated milk.
  • 10 oz of frozen chopped broccoli, thawed.
  • 7 ounces (1 can) of tuna, drained, flaked.
  • 1 cup of all-purpose flour.
  • 1/3 cup of enriched corn meal.
  • 1/3 cup of margarine.
  • ¼ cup of cold water.
  • ¼ cup of grated parmesan cheese.
  • ½ teaspoon of salt.
  • ½ teaspoon of dillweed.
  • Lemon wedges, to serve with.

Preheat oven to 350°F (175°C). Combine flour, corn meal and ¼ teaspoon salt.Cut in the margarine until the mixture resembles coarse crumbs.
Add water, one tablespoon at a time, stirring lightly with a fork until the mixture forms a ball.
On a lightly floured surface, roll out the pastry to form a twelve-inch circle. Fit this loosely into nine-inch glass pie plate. Trim, turn edges under and flute.Place the broccoli between layers of paper towels and pat gently to absorb excess water. Combine the broccoli, the other ¼ teaspoon of salt and remaining ingredients; mixing thoroughly.
Pour the mixture into the pastry shell and bake for 60 minutes. Allow to stand for ten 10 minutes, then serve with lemon wedges...and the baked tuna pie is read for fiesta...great taste !

Avocado Lime Pie

  • 1 cup sieved avocado pulp.
  • 1 (14 ounce) can sweetened condensed milk.
  • 1 teaspoon grated lime zest.
  • 1/2 cup fresh lime juice.
  • 2 egg yolks.
  • 1 pinch salt.
  • 1 recipe pastry for a 9 inch single crust pie.

1. Combine sweetened condensed milk, lime zest,lime juice, lightly beaten egg yolks, and salt; blend until mixture thickens. Stir in avocado pulp. Pour filling into pie shell.
2. Chill pie for several hours. Garnish with whipped cream, and the avocado lime pie is ready to serve...nice taste ! Enjoy !

Apple Pie recipe

Try this great Apple Pie recipe...a classic one !

  • 2 1/2 cups white flour
  • 2 tbsp. sugar
  • 1/4 tsp. salt
  • 1/2 cup cold butter, broken into small pieces
  • 5 tbsp. cold vegetable shortening
  • 8 tbsp. ice water
  • 1/3 to 2/3 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 8 medium sized apples (a medium apple = about 1 cup)
  • 2 tablespoons margarine


Measure the flour, sugar and salt togetherl. Stir to combine.Add the chilled butter pieces and shortening to the bowl. Cut them in with a pastry cutter or knife.
Add the ice water. Mix until the dough holds together (add a bit more water, if necessary).
Turn the dough onto a lightly floured surface, knead it together, then divide in half.
Flatten each half into a disk, wrap in saran wrap and chill for at least half an hour.
Roll out one of the disks on a lightly floured surface until you have a circle that's about 12 inches in diameter.
Put the circle in a 9" pie plate, trimming any extra dough from the edges with a sharp knife (parents only).
Return it to the refrigerator until you are ready to make the pie.
Add filling (see below).

Roll out the second ball of dough and cover top.Use a fork or your fingers to pinch the edges together.Cut two small slits in the top.


Heat oven to 425 degrees.Peel, core and slice the apples.Mix sugar, flour, nutmeg, cinnamon, and salt in large bowl.Stir in apples.
Pour into pastry-lined pie dish.Dot with margarine.Cover with top crust and seal the edges.
Cut two small slits in the top.
Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust. And the apple pie is ready to serve..great tasting pie ! Enjoy
